A new wave of casual dining is making its mark in the heart of downtown Dallas with the introduction of a groundbreaking option at Sauvage. Once renowned for its hefty multi-course tasting menu, this high-end mom-and-pop restaurant is now rolling out a more accessible concept aimed at mingling flavors with convenience.
Since opening in September, Sauvage has been a gastronomic standout, captivating diners with its meticulous 16 to 18-course menu comprising wild game, seafood, and innovative vegetable dishes, all prepared through grilling and smoking techniques. However, eager feedback from diners has led owners Casey and Amy LaRue to introduce a more casual alternative, aptly named “Cocktails & Bites.” Served weekdays from 5-6 PM, this three-course experience pairs unique small dishes with crafted cocktails, each reflecting the restaurant's commitment to quality.

The initial response to Sauvage's full tasting menu highlighted a common dining desire: the option to indulge without a hefty commitment. Casey LaRue noted that patrons were expressing a desire for lighter options that wouldn't necessitate the entire multi-course experience. To answer this, the new “Cocktails & Bites” menu has quickly become a desired draw, featuring selections like dry-aged red snapper crudo paired with a refreshing mezcal cocktail and foie gras & truffle served on a house-baked croissant.
No Caviar, No Problem
